Lamb With Root Vegetables

Ingredients

- 500 g boneless lamb chops (2 chops)
- 5 small red beets, sliced
- 1 large potato, cubed
- 1 medium yellow onion, sliced
- 6 cloves garlic, peeled
- 2 apples, pippin or other tart,peeled,cored,and sliced
- 2 tablespoons olive oil, separated
- salt
- pepper
Recipe
- 1 preheat the oven to 175°c (350°f).
- 2 heat a seasoned cast iron skillet over high heat.
- 3 when hot, add 1 t of the oil.
- 4 salt and pepper the lamb chops on both sides.
- 5 brown the lamb chops in the hot oil on both sides.
- 6 add the garlic, onion, potato, beets, and apples to the pan.
- 7 sprinkle the rest of the oil on top.
- 8 salt and pepper liberally.
- 9 bake for 35 minutes.
- 10 remove the lamb from the pan.
- 11 rest the lamb for 5 minutes before serving.
