Lamb- Spinach Pasta Toss

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1/2 lb spaghetti, whole wheat
  • 1/4 cup vinaigrette dressing, balsamic
  • 1 lb lamb, tenderloin, cut into bite sized pieces
  • 1 cup onion, red, chopped
  • 3 tablespoons garlic, minced
  • 1 1/2 cups tomatoes, cherry, halved
  • 1/3 cup chicken broth, low sodium
  • 10 ounces spinach, leaves
  • 1 cup cheese, italian blend

Recipe

  • 1 boil pasta.
  • 2 heat 2 tbs of vinaigrette, add lamb and brown.
  • 3 add broth and remaining vinaigrette.
  • 4 add onions, cook until glossy.
  • 5 add spinach, cover to wilt.
  • 6 add tomatoes, cook until warmed.
  • 7 drain and toss in pasta, add 1/2 cup cheese and mix lightly.
  • 8 plate adding remaining cheese and serve.
