Lamb- Spinach Pasta Toss

Ingredients
- Servings: 4
- 1/2 lb spaghetti, whole wheat
- 1/4 cup vinaigrette dressing, balsamic
- 1 lb lamb, tenderloin, cut into bite sized pieces
- 1 cup onion, red, chopped
- 3 tablespoons garlic, minced
- 1 1/2 cups tomatoes, cherry, halved
- 1/3 cup chicken broth, low sodium
- 10 ounces spinach, leaves
- 1 cup cheese, italian blend
Recipe
- 1 boil pasta.
- 2 heat 2 tbs of vinaigrette, add lamb and brown.
- 3 add broth and remaining vinaigrette.
- 4 add onions, cook until glossy.
- 5 add spinach, cover to wilt.
- 6 add tomatoes, cook until warmed.
- 7 drain and toss in pasta, add 1/2 cup cheese and mix lightly.
- 8 plate adding remaining cheese and serve.
