Lamb With Roasted Peppers & Potatoes

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 boneless lamb chops, 1/2 inch thick
  • 1 tablespoon olive oil
  • 4 medium red potatoes
  • 1 medium onion
  • 1 teaspoon dried oregano leaves, crushed
  • 1 cup chicken broth
  • 1/2 cup diced roasted red pepper

Recipe

  • 1 season chops with black pepper.
  • 2 heat oil in nonstick skillet over medium-high heat.
  • 3 add chops and cook 10 minutes or until browned.
  • 4 remove chops.
  • 5 add potatoes, onion and oregano.
  • 6 cook 5 minutes or until browned, stirring occasionally.
  • 7 add chops, broth and peppers.
  • 8 heat to a boil.
  • 9 cover and cook over low heat 5 minutes or until done.
