Lamb With Roasted Peppers & Potatoes

Ingredients
- Servings: 4
- 4 boneless lamb chops, 1/2 inch thick
- 1 tablespoon olive oil
- 4 medium red potatoes
- 1 medium onion
- 1 teaspoon dried oregano leaves, crushed
- 1 cup chicken broth
- 1/2 cup diced roasted red pepper
Recipe
- 1 season chops with black pepper.
- 2 heat oil in nonstick skillet over medium-high heat.
- 3 add chops and cook 10 minutes or until browned.
- 4 remove chops.
- 5 add potatoes, onion and oregano.
- 6 cook 5 minutes or until browned, stirring occasionally.
- 7 add chops, broth and peppers.
- 8 heat to a boil.
- 9 cover and cook over low heat 5 minutes or until done.
