Lamb Chops With Potatoes And Onions

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 2 tablespoons vegetable oil
  • 4 lamb chops, trimmed (1/2 inch thick)
  • 2 tablespoons all-purpose flour
  • 1/3 cup parmesan cheese, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 yukon gold potatoes, thinly sliced
  • 2 medium onions, sliced
  • 2 beef bouillon cubes
  • 3/4 cup hot water
  • 1 tablespoon lemon juice

Recipe

  • 1 heat oil in a large skillet over medium heat.
  • 2 coat the lamb chops with flour, and place in the skillet.
  • 3 brown about 4 minutes on each side.
  • 4 in a small bowl, mix the parmesan cheese, salt, and pepper.
  • 5 sprinkle 1/2 the parmesan cheese mixture over the lamb chops.
  • 6 layer chops with the potatoes.
  • 7 sprinkle with remaining parmesan cheese mixture.
  • 8 top with onion slices.
  • 9 in a small bowl, dissolve the beef bouillon cubes in hot water.
  • 10 stir in the lemon juice.
  • 11 pour over the layered lamb chops.
  • 12 cover skillet, and reduce heat.
  • 13 simmer 40 minutes, until vegetables are tender and lamb chops have reached an internal temperature of 160°f (70°c).
