Slow-cooked Spicy Lamb Chili

Ingredients

- 2 lbs boneless lamb, cut in 1/2-inch cubes
- 1 tablespoon vegetable oil
- 1 (28 ounce) can crushed tomatoes
- 2 cups frozen corn
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup onion, chopped
- 1 (15 ounce) can beef broth
- 1 (4 ounce) can green chilies, chopped
- 1 tablespoon chili powder
- 1 teaspoon garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon pepper
- 1/4 cup fresh cilantro
Recipe
- 1 cook lamb in oil for 5-6 minutes until browned.
- 2 transfer lamb and drippings to a 5-quart slow-cooker.
- 3 stir in tomatoes, corn, beans, onion, and chilies.
- 4 stir all the spices into the beef broth and pour over top.
- 5 cover and cook on low for 6 hours or until lamb is tender.
- 6 stir in cilantro before serving.
- 7 you can add shredded cheese as garnish.
