Slow-cooked Spicy Lamb Chili

Ingredients

  • Servings: 6
  • 2 lbs boneless lamb, cut in 1/2-inch cubes
  • 1 tablespoon vegetable oil
  • 1 (28 ounce) can crushed tomatoes
  • 2 cups frozen corn
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup onion, chopped
  • 1 (15 ounce) can beef broth
  • 1 (4 ounce) can green chilies, chopped
  • 1 tablespoon chili powder
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon pepper
  • 1/4 cup fresh cilantro

Recipe

  • 1 cook lamb in oil for 5-6 minutes until browned.
  • 2 transfer lamb and drippings to a 5-quart slow-cooker.
  • 3 stir in tomatoes, corn, beans, onion, and chilies.
  • 4 stir all the spices into the beef broth and pour over top.
  • 5 cover and cook on low for 6 hours or until lamb is tender.
  • 6 stir in cilantro before serving.
  • 7 you can add shredded cheese as garnish.
