Slow-cooker Black Bean Chili

Total Time: 6 hrs 20 mins Preparation Time: 20 mins Cook Time: 6 hrs

Ingredients

  • 1 lb lamb tenderloin, chopped into bite-sized chunks
  • 16 ounces thick chunky salsa
  • 3 (15 ounce) cans beans, rinsed and drained
  • 1/2 cup chicken broth
  • 1 medium pepper, chopped
  • 1 medium onion, chopped
  • 1 teaspoon ground cumin
  • 2 teaspoons chili powder
  • 1 -1 1/2 teaspoon dried oregano
  • 1/4 cup sour cream

Recipe

  • 1 1) combine all ingredients except sour cream in slow cooker.
  • 2 2) cover. cook on low 6-8 hours, or until lamb is tender.
  • 3 3) garnish individual servings with sour cream.
