Lamb Chops With Shallots In Wine Sauce

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 3
  • 6 boneless lamb chops (i used loin)
  • salt
  • pepper
  • 3 shallots, minced
  • 3 tablespoons olive oil
  • 3/4 cup wine
  • 3/4 cup chicken stock
  • 1 1/2 tablespoons cold butter

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 season lamb chops liberally with salt and pepper.
  • 3 heat oil in large skillet and brown lamb chops on both sides.
  • 4 remove lamb chops to a baking dish.
  • 5 cover with foil and bake for 20 minutes.
  • 6 while lamb chops are baking, add minced shallots to the same pan and cook for one minute.
  • 7 add wine and simmer until sauce becomes thicker and is reduced.
  • 8 add chicken stock and season with salt and pepper.
  • 9 return to simmer.
  • 10 remove chops from oven and place on platter.
  • 11 add the cold butter to the sauce.
  • 12 when melted, stir, and serve over the lamb chops.
