Lamb Chops With Tomatillo Beans

Ingredients

- 4 boneless lamb chops
- 2 (15 ounce) cans great northern beans, drained
- 2 cups avocado tomatillo salsa
- 1/4 cup chopped onion
- 1/4 cup chopped fresh cilantro
- 1 teaspoon salt, to taste
- 1 teaspoon pepper, to taste
- 1 tablespoon olive oil
- 1/4 cup chicken stock or 1/4 cup chicken broth
Recipe
- 1 marinate the chops ahead of time in the salsa if you like.
- 2 after marinating, salt and pepper chops. in a small amount of oil over med high heat, pan fry the chops for 2 min each side. add the chopped onions while frying. remove chops.
- 3 in the same pan, add the beans, a small amount of chicken stock, salsa to taste, cilantro, and pepper to taste. stir completely and bring to a boil. add the chops back inches cover, reduce heat and simmer until done.
