Orange Lamb Ragout

Ingredients
- Servings: 4
- 1 lb lamb loin, cubed
- 1 cup chicken broth
- 1 cup orange juice
- 1 cup sliced onion
- 1 cup red bell pepper
- 1 cup green bell pepper
- 2 teaspoons sugar
- 1 teaspoon dried thyme
- 1/2 teaspoon ground cloves
- 2 tablespoons cornstarch
- 1/4 cup cold water
- salt and pepper
- 3 cups cooked rice, kept warm
Recipe
- 1 combine all ingredients except cornstarch, water, salt, pepper and rice in a slow cooker.
- 2 cover and cook on low for 6-8 hours.
- 3 turn heat to high and cook 10 minutes.
- 4 combine cornstarch and water. stir into stew. 2-3 more minutes.
- 5 season to taste with salt and pepper and serve over rice.
