Orange Lamb Ragout

Total Time: 6 hrs 15 mins Preparation Time: 15 mins Cook Time: 6 hrs

Ingredients

  • Servings: 4
  • 1 lb lamb loin, cubed
  • 1 cup chicken broth
  • 1 cup orange juice
  • 1 cup sliced onion
  • 1 cup red bell pepper
  • 1 cup green bell pepper
  • 2 teaspoons sugar
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cloves
  • 2 tablespoons cornstarch
  • 1/4 cup cold water
  • salt and pepper
  • 3 cups cooked rice, kept warm

Recipe

  • 1 combine all ingredients except cornstarch, water, salt, pepper and rice in a slow cooker.
  • 2 cover and cook on low for 6-8 hours.
  • 3 turn heat to high and cook 10 minutes.
  • 4 combine cornstarch and water. stir into stew. 2-3 more minutes.
  • 5 season to taste with salt and pepper and serve over rice.
