Parmesan Ranch Meatloaf #rsc

Ingredients
- Servings: 6
- 2/3 cup hidden valley® original ranch® dressing
- 1 cup parmesan cheese, grated (reserve 1/3 cup)
- 1 tablespoon worcestershire sauce
- 2 eggs, beaten
- 1 1/2 cups breadcrumbs
- 1 lb ground lamb
- 1 lb ground sirloin
- 2 medium shallots, finely chopped
Recipe
- 1 heat oven to 375 degrees f.
- 2 line a 13 x 9 x 2 inch pan with non-stick aluminum foil.
- 3 in a large mixing bowl, combine dressing, 2/3 cup parmesan, worcestershire, eggs and breadcrumbs and stir well.
- 4 crumble the ground lamb and ground sirloin into the breadcrumb mixture.
- 5 add the chopped shallots.
- 6 gently mix by hand until thoroughly combined, being careful to not overwork it.
- 7 shape mixture into a loaf and place in prepared pan.
- 8 bake uncovered 1 hour or until meat is done medium well.
- 9 remove from oven, sprinkle reserved parmesan over the top and allow loaf to rest 5 minutes before serving.
