Puffed Potatoes & Sausage

Ingredients
- Servings: 4
- 1/4 cup green onion, with tops sliced
- 2 tablespoons butter
- 3 medium potatoes, peeled and cubed
- 1 cup american cheese, shredded
- 3 egg yolks
- 1/3 cup milk
- 1/2 teaspoon salt
- 3 stiffly beaten egg whites
- 1 (8 ounce) package brown-and-serve sausage links
Recipe
- 1 cook onion in butter till tender but not brown.
- 2 cook potatoes in boiling salted water till tender, about 10 minutes; drain and mash (about 2 cups mashed).
- 3 beat in cooked onion and cheese.
- 4 beat together egg yolks, milk and salt; blend into potato mixture.
- 5 fold in beaten egg whites.
- 6 turn into a 2-qt. casserole.
- 7 arrange sausage links over potato mixture.
- 8 bake, uncovered, at 375 till set, about 45 minutes.
