Puffed Potatoes & Sausage

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1/4 cup green onion, with tops sliced
  • 2 tablespoons butter
  • 3 medium potatoes, peeled and cubed
  • 1 cup american cheese, shredded
  • 3 egg yolks
  • 1/3 cup milk
  • 1/2 teaspoon salt
  • 3 stiffly beaten egg whites
  • 1 (8 ounce) package brown-and-serve sausage links

Recipe

  • 1 cook onion in butter till tender but not brown.
  • 2 cook potatoes in boiling salted water till tender, about 10 minutes; drain and mash (about 2 cups mashed).
  • 3 beat in cooked onion and cheese.
  • 4 beat together egg yolks, milk and salt; blend into potato mixture.
  • 5 fold in beaten egg whites.
  • 6 turn into a 2-qt. casserole.
  • 7 arrange sausage links over potato mixture.
  • 8 bake, uncovered, at 375 till set, about 45 minutes.
