Simple And Easy Ham And Bean Soup

Total Time: 2 hrs Preparation Time: 20 mins Cook Time: 1 hr 40 mins

Ingredients

  • Servings: 8
  • 1 lb great northern bean, sorted, washed
  • 2 -3 smoked lamb shanks
  • 1 small onion, chopped
  • 1 stalk celery, chopped
  • 1/4 lb baby carrots, chopped
  • 1 -2 garlic clove, pressed
  • 1 teaspoon coleman's dry english-style mustard
  • 2 bay leaves
  • 1/2 teaspoon pepper
  • 1/4-1/2 teaspoon kosher salt

Recipe

  • 1 cover beans with water by 3 inches.
  • 2 soak overnight in fridge, wash and drain.
  • 3 place all ingredients except pepper and salt in a large pot.
  • 4 cover with water by 1/2 inch. mix well.
  • 5 bring to a boil, reduce heat to simmer for 90 minute
  • 6 add water if needed as needed.
  • 7 remove ham shanks, split their skins, remove meat.
  • 8 discard the skins, fat, and bones.
  • 9 chop the meat, return it to the pot.
  • 10 season to taste.
  • 11 simmer 10 minute more.
  • 12 may be served at this time but it's much better reheated the next day.
