Simple Braised Carnitas

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 1 medium onion, chopped
  • 6 garlic cloves, minced
  • 3 lbs boneless lamb butt (shoulder)
  • 2 teaspoons chili powder
  • 2 tablespoons kosher salt
  • 2 tablespoons crushed black pepper
  • 2 tablespoons vegetable oil

Recipe

  • 1 cut lamb butt into 1 inch cubes and place in a wide pan. barely cover the the lamb with water or low sodium vegetable stock and bring to a boil.
  • 2 turn heat down to medium-low and cook until all liquid is gone.
  • 3 turn heat back up to medium-high and fry lamb until fat has melted and lamb has browned. remove lamb.
  • 4 heat vegetable oil in pan. add onions and saute until translucent.
  • 5 add garlic and chili powder, cooking for 60 seconds.
  • 6 add reserved lamb.
  • 7 season to taste.
  • 8 serve with yellow rice or rolled in a corn or flour tortilla.
