Smothered Lamb Chops In Red Eye Gravy

Ingredients

- 4 assorted type bone in lamb chops
- creole seasoning (i use tony chacherie)
- 24 ounces of freshly brewed black coffee (use 6 ounces of coffee per lamb chop)
- cooked old fashioned grits (not instant)
Recipe
- 1 season lamb chops heavily.
- 2 in large skillet brown lamb chops until mahogany in color (this will probably take about 45 minutes to 1 hour).
- 3 add coffee to skillet.
- 4 cover, reduce heat and simmer until fork tender (about 1 hour).
