Smothered Lamb Chops In Red Eye Gravy

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 4 assorted type bone in lamb chops
  • creole seasoning (i use tony chacherie)
  • 24 ounces of freshly brewed black coffee (use 6 ounces of coffee per lamb chop)
  • cooked old fashioned grits (not instant)

Recipe

  • 1 season lamb chops heavily.
  • 2 in large skillet brown lamb chops until mahogany in color (this will probably take about 45 minutes to 1 hour).
  • 3 add coffee to skillet.
  • 4 cover, reduce heat and simmer until fork tender (about 1 hour).
  • 5 serve over hot cooked grits.
