Smothered Lamb Chops

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 4 thick-cut lamb chops
  • 3/4 cup uncooked rice
  • 1 medium onion
  • salt and pepper
  • 1 lemon (or equivalent of juice if no fresh lemon available)
  • 1 can cream of mushroom soup, divided

Recipe

  • 1 preheat oven to 325 degrees.
  • 2 trim fat from lamb chops.
  • 3 place lamb chops in skillet over low heat.
  • 4 brown on both sides.
  • 5 pour rice into large baking dish, mix 1/4 can of soup with the rice.
  • 6 place lamb chops on rice mixture.
  • 7 cut onion into 4 slices; place one on each lamb chop.
  • 8 sprinkle with small amount of salt and pepper.
  • 9 cut lemon into 4 slices; place one on each onion slice.
  • 10 or sprinkle lemon juice liberally over lamb chops.
  • 11 spoon remaining 3/4 can soup over lamb chops.
  • 12 cover dish.
  • 13 bake at 325 degrees for 1 hour.
