Smothered Lamb Chops

Ingredients
- Servings: 4
- 4 thick-cut lamb chops
- 3/4 cup uncooked rice
- 1 medium onion
- salt and pepper
- 1 lemon (or equivalent of juice if no fresh lemon available)
- 1 can cream of mushroom soup, divided
Recipe
- 1 preheat oven to 325 degrees.
- 2 trim fat from lamb chops.
- 3 place lamb chops in skillet over low heat.
- 4 brown on both sides.
- 5 pour rice into large baking dish, mix 1/4 can of soup with the rice.
- 6 place lamb chops on rice mixture.
- 7 cut onion into 4 slices; place one on each lamb chop.
- 8 sprinkle with small amount of salt and pepper.
- 9 cut lemon into 4 slices; place one on each onion slice.
- 10 or sprinkle lemon juice liberally over lamb chops.
- 11 spoon remaining 3/4 can soup over lamb chops.
- 12 cover dish.
- 13 bake at 325 degrees for 1 hour.
