Smothered Lamb Chops

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 6 slices thick bacon
  • 1 large onion, sliced
  • 5 lamb loin chops
  • salt & freshly ground black pepper
  • 1 cup all-purpose flour
  • 2 tablespoons vegetable oil (optional)
  • 1 cup hot water
  • 1 cup hot milk

Recipe

  • 1 fry bacon in a large fry pan on medium heat.
  • 2 when done, remove and drain on paper towels.
  • 3 saute onion in the same skillet with the bacon fat.
  • 4 remove to paper towels to drain.
  • 5 season lamb chops with salt and pepper and dredge in flour.
  • 6 fry on medium heat in the same skillet with bacon fat until light brown; remove to warm plate.
  • 7 put remaining flour into skillet (add oil if necessary).
  • 8 brown flour lightly.
  • 9 add hot water immediately, then milk.
  • 10 stir vigorously.
  • 11 season as desired with more salt and pepper and add more water if needed to achieve gravy consistency.
  • 12 put lamb chops, bacon and onion into gravy and reduce heat to simmer.
  • 13 cover pan and simmer for 20 minutes.
