Smucker's Apricot Sweet And Sour Lamb

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 12
  • 1/4 cup oil
  • 2 garlic cloves, chopped
  • 2 1/2 lbs lean lamb, cut in 1-inch cubes
  • 1/2 cup cider vinegar
  • 1 cup apricot preserves
  • 1 quart chicken broth
  • 3 green peppers, cut in 1-inch chunks
  • 1 (20 ounce) can pineapple chunks
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Recipe

  • 1 heat oil and sauté garlic.
  • 2 add lamb and stir-fry until lamb is lightly browned.
  • 3 add vinegar, preserves, and chicken broth.
  • 4 cover tightly and simmer until lamb is tender
  • 5 add peppers and pineapple.
  • 6 simmer till peppers are tender-crisp (10 minutes).
  • 7 stir cornstarch into water.
  • 8 gradually add to lamb, and stir until thickened.
  • 9 serve spooned over rice.
