Smucker's Apricot Sweet And Sour Lamb

Ingredients

- 1/4 cup oil
- 2 garlic cloves, chopped
- 2 1/2 lbs lean lamb, cut in 1-inch cubes
- 1/2 cup cider vinegar
- 1 cup apricot preserves
- 1 quart chicken broth
- 3 green peppers, cut in 1-inch chunks
- 1 (20 ounce) can pineapple chunks
- 1 teaspoon cornstarch
- 2 tablespoons water
Recipe
- 1 heat oil and sauté garlic.
- 2 add lamb and stir-fry until lamb is lightly browned.
- 3 add vinegar, preserves, and chicken broth.
- 4 cover tightly and simmer until lamb is tender
- 5 add peppers and pineapple.
- 6 simmer till peppers are tender-crisp (10 minutes).
- 7 stir cornstarch into water.
- 8 gradually add to lamb, and stir until thickened.
- 9 serve spooned over rice.
