Lamb Kabobs

Ingredients
- 1 (1 1/2 lb) lean boneless lamb loin
- 1/2 cup orange juice
- 1/4 cup red wine vinegar
- 1 garlic clove
- 1/2 teaspoon dried oregano
- 2 small onions, cut into 1 inch pieces
- 1 large bell pepper, cut into 1 inch pieces
- 8 ounces fresh mushrooms
Recipe
- 1 trim fat from lamb.
- 2 cut lamb into 1-inch cubes.
- 3 in resealable plastic bag combine juice,vinegar,garlic,and oregano.
- 4 seal bag and refrigerate 2-24 hours.
- 5 preheat grill.
- 6 drain and discard marinade.
- 7 thread lamb and vegetables onto 6 skewers; grill over medium-high heat 12-14 minutes,turning once or until lamb is just pink in center(160degrees).
