Lamb Kebabs

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 ounces guava jelly (i like the goya jelly)
  • 2 limes, juice of
  • minced jalapeno
  • 1 tablespoon minced ginger
  • 1/4 cup rough chopped cilantro
  • 4 slices bacon
  • 2 lbs boneless lamb loin
  • kosher salt
  • pepper
  • 1 pineapple
  • 2 red bell peppers

Recipe

  • 1 cut lamb, pineapple, and bell peppers into 1 inch cubes whisk together first 5 ingredients in a bowl cook bacon through, but not until it gets crispy cut into 1 inch slices thread bacon, lamb, pineapple, and peppers onto skewers grill, basting kebabs with the jelly mixture.
