Ingredients

- 4 ounces guava jelly (i like the goya jelly)
- 2 limes, juice of
- minced jalapeno
- 1 tablespoon minced ginger
- 1/4 cup rough chopped cilantro
- 4 slices bacon
- 2 lbs boneless lamb loin
- kosher salt
- pepper
- 1 pineapple
- 2 red bell peppers
Recipe
- 1 cut lamb, pineapple, and bell peppers into 1 inch cubes whisk together first 5 ingredients in a bowl cook bacon through, but not until it gets crispy cut into 1 inch slices thread bacon, lamb, pineapple, and peppers onto skewers grill, basting kebabs with the jelly mixture.
