Lamb Fried Rice

Ingredients
- Servings: 4
- 4 cups cooked rice
- 1 1/2 cups cooked lamb
- 1 pepper, chopped (green, red, orange or yellow)
- 1 -2 scallion, chopped
- 1 tablespoon vegetable oil (i like to use olive oil)
- 2 -3 tablespoons soy sauce (i use reduced sodium with no probs)
- 1 -2 garlic clove, diced finely
- 1/4 teaspoon black pepper (i use fresh ground)
- 2 eggs
Recipe
- 1 cut meat into thin strips, about an inch long.
- 2 saute scallions in oil for about 5 minutes.
- 3 add peppers and cook until soft.
- 4 remove and keep warm.
- 5 add meat and brown.
- 6 add soy sauce, garlic and black pepper.
- 7 simmer for a minute or two, until liquid is absorbed into meat.
- 8 add scallions and peppers back to pan.
- 9 add cooked rice and heat through.
- 10 while mixture is heating through, in a small bowl beat egg.
- 11 then in a small fry pan, scramble egg.
- 12 add to rice mixture and serve.
