Lamb Cutlets, Milan Style

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs thinly sliced boneless lamb loin
  • salt and pepper
  • 1 egg, lightly beaten
  • 3 tablespoons cold water
  • 1 cup fresh fine breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 4 tablespoons cooking oil
  • marinara sauce

Recipe

  • 1 properly sliced lamb will look like veal scaloppine.
  • 2 pound each slice lightly on a flat surface with a flat mallet.
  • 3 sprinkle both sides with salt and pepper.
  • 4 put egg, water, salt and pepper in a mixing bowl.
  • 5 beat well.
  • 6 combine bread crumbs and cheese in a flat dish.
  • 7 dip lamb slices in egg mixture to coat.
  • 8 dredge slices on both sides in crumb mixture.
  • 9 pat sides lightly to adhere crumbs.
  • 10 heat 2 t oil in heavy skillet and in a single layer cook all lamb until golden brown (3 mins per side).
  • 11 as lamb cooks, transfer to heated platter.
  • 12 continue cooking using the oil as necessary.
  • 13 serve slices with a little marinara sauce.
