Lamb Cutlets, Milan Style

Ingredients

- 1 1/2 lbs thinly sliced boneless lamb loin
- salt and pepper
- 1 egg, lightly beaten
- 3 tablespoons cold water
- 1 cup fresh fine breadcrumbs
- 1/4 cup grated parmesan cheese
- 4 tablespoons cooking oil
- marinara sauce
Recipe
- 1 properly sliced lamb will look like veal scaloppine.
- 2 pound each slice lightly on a flat surface with a flat mallet.
- 3 sprinkle both sides with salt and pepper.
- 4 put egg, water, salt and pepper in a mixing bowl.
- 5 beat well.
- 6 combine bread crumbs and cheese in a flat dish.
- 7 dip lamb slices in egg mixture to coat.
- 8 dredge slices on both sides in crumb mixture.
- 9 pat sides lightly to adhere crumbs.
- 10 heat 2 t oil in heavy skillet and in a single layer cook all lamb until golden brown (3 mins per side).
- 11 as lamb cooks, transfer to heated platter.
- 12 continue cooking using the oil as necessary.
- 13 serve slices with a little marinara sauce.
