Piri Piri Lamb Stir-fry

Ingredients

  • Servings: 4
  • 2 potatoes
  • 3 tablespoons oil
  • 500 g lamb
  • 2 carrots
  • 4 spring onions
  • 135 g baby sweetcorn
  • 155 g snow peas
  • 6 tablespoons piri-piri

Recipe

  • 1 preheat the oven to 220c/200c fan/gas 7. add the potatoes to a pan of boiling water, cover and simmer for 5 minutes. drain. put in a roasting tin with 1 tbsp oil and toss. roast for 25 minutes.
  • 2 heat 1tbsp oil in a wok or frying pan and stir-fry the lamb for 4-5 minutes until cooked. drain off any meat juices and reserve.
  • 3 add 1tbsp oil and the carrots. stir-fry for 1 minute.
  • 4 add the remaining vegetables and stir-fry for another 2-3 minutes.
  • 5 stir in the piri piri sauce, reserved meat juices and 2tbsp water and heat through. serve with the potato wedges.
