Roasted Lamb & Sweet Potatoes

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 3 1/2-4 lbs boneless lamb loin roast
  • 2 teaspoons rubbed sage
  • 1 teaspoon dried thyme leaves
  • 1 garlic clove, pressed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 lbs sweet potatoes (cut into chunks)

Recipe

  • 1 preheat oven to 350 degrees. mix together sage, thyme, garlic, salt & pepper. rub all but 2 tsp over entire lamb roast.
  • 2 spritz potato chunks with oil & toss with remaining herb mix. put roast & potatoes in covered roaster & bake for 1 hr 15 minute bake uncovered for additional 15-30 min or til thermometer inserted in meat reads 165 degrees.
  • 3 let roast stand 10 min before serving.
