Roasted Lamb & Sweet Potatoes

Ingredients

- 3 1/2-4 lbs boneless lamb loin roast
- 2 teaspoons rubbed sage
- 1 teaspoon dried thyme leaves
- 1 garlic clove, pressed
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 lbs sweet potatoes (cut into chunks)
Recipe
- 1 preheat oven to 350 degrees. mix together sage, thyme, garlic, salt & pepper. rub all but 2 tsp over entire lamb roast.
- 2 spritz potato chunks with oil & toss with remaining herb mix. put roast & potatoes in covered roaster & bake for 1 hr 15 minute bake uncovered for additional 15-30 min or til thermometer inserted in meat reads 165 degrees.
- 3 let roast stand 10 min before serving.
