Lamb In Orange Sauce

Ingredients

- 2 tablespoons vegetable oil
- 1 lb boneless lamb, cut in 1/2 inch cubes
- 2 carrots, sliced
- 2 celery ribs, chopped
- 1 tablespoon orange zest
- 1/2 cup orange juice
- 2 tablespoons soy sauce
- 2 teaspoons cornstarch
- 1/8 teaspoon ground ginger
- 1/4 cup cashews (optional)
- 2 teaspoons sugar
- 3 cups cooked rice, kept warm
Recipe
- 1 heat oil in large skillet until hot. stir fry lamb until browned, 3-4 minutes.
- 2 add carrots and celery; stir fry until crisp-tender, about 5 minutes.
- 3 stir in remaining ingredients. heat to boiling.
- 4 cook, stirring, until thickened, about 1-2 minutes. serve over rice.
