Lamb In Orange Sauce

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 tablespoons vegetable oil
  • 1 lb boneless lamb, cut in 1/2 inch cubes
  • 2 carrots, sliced
  • 2 celery ribs, chopped
  • 1 tablespoon orange zest
  • 1/2 cup orange juice
  • 2 tablespoons soy sauce
  • 2 teaspoons cornstarch
  • 1/8 teaspoon ground ginger
  • 1/4 cup cashews (optional)
  • 2 teaspoons sugar
  • 3 cups cooked rice, kept warm

Recipe

  • 1 heat oil in large skillet until hot. stir fry lamb until browned, 3-4 minutes.
  • 2 add carrots and celery; stir fry until crisp-tender, about 5 minutes.
  • 3 stir in remaining ingredients. heat to boiling.
  • 4 cook, stirring, until thickened, about 1-2 minutes. serve over rice.
