Lamb Medallions With Apples And Cheese

Ingredients
- Servings: 6
- 2 lamb tenderloin (around 2 to 2&1/2 pounds total)
- 3 tablespoons butter, divided
- 4 ounces canadian oka cheese or 4 ounces brie cheese, cut into 12 slices
- 1 shallot, finely chopped
- 2 tart apples, cored and cut into 18 slices
- 1 teaspoon packed brown sugar
- 1/2 cup apple cider
- 1/2 teaspoon poultry seasoning
- 1/3 cup whipping cream
Recipe
- 1 cut tenderloins into 12 equal pieces and pound between plastic or waxed paper until 1/4 inch thick.
- 2 melt 1&1/2 t.
- 3 butter in a large skillet over medium high heat.
- 4 cook lamb for 2 minutes per side.
- 5 remove from pan.
- 6 reserve juices.
- 7 top each piece of lamb with a slice of cheese and place in a warm oven to just melt the cheese.
- 8 melt the remaining butter and add the apple slices and sugar to the pan.
- 9 cook and stir for 3 minutes.
- 10 remove from pan.
- 11 add cider, poultry seasoning and any juices from the lamb to the skillet.
- 12 cook and stir over high heat until the liquid is reduced to half.
- 13 pour in cream.
- 14 stir to thicken slightly.
- 15 add salt and pepper to taste.
- 16 place apples on a serving plate-top with cheese covered lamb and pour the cream mixture on top.
- 17 serve.
