Lamb Medallions With Apples And Cheese

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 2 lamb tenderloin (around 2 to 2&1/2 pounds total)
  • 3 tablespoons butter, divided
  • 4 ounces canadian oka cheese or 4 ounces brie cheese, cut into 12 slices
  • 1 shallot, finely chopped
  • 2 tart apples, cored and cut into 18 slices
  • 1 teaspoon packed brown sugar
  • 1/2 cup apple cider
  • 1/2 teaspoon poultry seasoning
  • 1/3 cup whipping cream

Recipe

  • 1 cut tenderloins into 12 equal pieces and pound between plastic or waxed paper until 1/4 inch thick.
  • 2 melt 1&1/2 t.
  • 3 butter in a large skillet over medium high heat.
  • 4 cook lamb for 2 minutes per side.
  • 5 remove from pan.
  • 6 reserve juices.
  • 7 top each piece of lamb with a slice of cheese and place in a warm oven to just melt the cheese.
  • 8 melt the remaining butter and add the apple slices and sugar to the pan.
  • 9 cook and stir for 3 minutes.
  • 10 remove from pan.
  • 11 add cider, poultry seasoning and any juices from the lamb to the skillet.
  • 12 cook and stir over high heat until the liquid is reduced to half.
  • 13 pour in cream.
  • 14 stir to thicken slightly.
  • 15 add salt and pepper to taste.
  • 16 place apples on a serving plate-top with cheese covered lamb and pour the cream mixture on top.
  • 17 serve.
