Lamb Rib Chops-electric Smoker

Ingredients
- Servings: 4
- 1/3 cup sea salt
- 1 quart apple juice
- 1 quart water
- 1 tablespoon black peppercorns
- 1 teaspoon cinnamon
- 1 teaspoon paprika
- 1 lime
- 1 1/2 lbs lamb rib chops, with bone
- 3 cups apple wood chips, soaked
Recipe
- 1 brining=put all ingredients into a glass jar, dissolve salt thoroughly.
- 2 add lamb & place jar in refrigerator for soak 4 hours.
- 3 remove lamb and rinse thoroughly ( 5+ times).
- 4 preheat smoker to 220f, place full water pan and pre-soaked chips into smoker.
- 5 smoke 2 1/2 hours until internal temperature of 165°f.
- 6 remove and let rest 10 minutes.
