Lamb Scallopini With Butter Caper Sauce

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs lamb tenderloin
  • 2 tablespoons capers
  • 1/3 cup wine
  • 1 1/2 tablespoons lemon juice
  • 1 -2 tablespoon olive oil
  • 2 tablespoons butter
  • 1/2 cup flour
  • 1/2 teaspoon sea salt

Recipe

  • 1 1. slice the lamb tenderloin into ½ inch slices on a diagonal.
  • 2 2. pound thin between plastic wrap with a meat mallet.
  • 3 3. sift together the flour and salt.
  • 4 4. lightly dredge the lamb and shake off any excess flour.
  • 5 5. in a large skillet, heat the olive oil over medium heat.
  • 6 6. cook the lamb 2-3 minutes on each side or until golden and transfer to a warm plate.
  • 7 7. wipe out skillet.
  • 8 8. heat a tablespoon of butter in skillet.
  • 9 9. add the capers, wine and lemon juice.
  • 10 10. allow to reduce just a little before adding the final tablespoon of butter.
  • 11 11. mix slowly to incorporate and remove immediately from the heat.
  • 12 12. spoon the sauce over the lamb and serve.
