Ingredients

- 1/2 small onion, thinly sliced
- 2 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon cilantro, chopped (optional)
- 1 tablespoon fresh lemon juice
- 2 teaspoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1/4 teaspoon saffron thread, crushed
- 1 lb lamb tenderloin, trimmed and cut into 1-inch cubes
- 1/2 teaspoon salt
Recipe
- 1 to make the marinade, combine all ingredients except the lamb and the salt in a ziploc plastic bag; add the lamb. squeeze out the air and seal the bag; turn to coat the lamb. refrigerate, turning the bag occasionally, at least 8 hours or up to 24 hours.
- 2 spray the broiler rack with olive oil nonstick spray and preheat the broiler.
- 3 thread 5 pieces of lamb onto each of 5 metal skewers (if using wooden skewers, soak them in warm water for about 30 minutes); sprinkle with salt. place the skewers on the broiler rack. broil 5 inches from the heat until browned and cooked through, about 4 minutes on each side. you can also barbeque these if you prefer.
