Lamb Tenderloin With Apricot Glaze

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs lamb tenderloin
  • 1/2 cup apricot jam
  • 2 tablespoons dijon mustard
  • 2 tablespoons balsamic vinegar or 2 tablespoons cider vinegar
  • 2 teaspoons worcestershire sauce

Recipe

  • 1 pat lamb dry.
  • 2 combine jam, mustard, vinegar and worcestershire sauce.
  • 3 coat lamb with glaze.
  • 4 place lamb on rack set over foil-lined baking sheet.
  • 5 roast in preheated 375°f oven for 40 to 50 minutes, or until cooked through (internal temperature about 160 f).
