Potatoes Stuffed With Smoked Paprika Lamb

Ingredients

- 6 large potatoes, skin on and washed
- 40 ml olive oil
- 1 red onion, finely sliced
- 300 g ground lamb
- 2 tomatoes, diced
- 2 tablespoons kalamata olives, pitted and quartered
- 2 garlic cloves, crushed
- 40 ml ginger, crushed
- 1 red onion, chopped
- 25 ml smoked paprika
- 20 ml chili sauce
- 40 ml lime juice
- oregano, to taste
- 20 ml red wine vinegar
- 40 ml olive oil
- salt and pepper
- 40 g cheddar cheese
Recipe
- 1 put the potatoes in a large pot of cold water. bring to boil and then drain and cool, enough to handle.
- 2 to prepare the sauce, blend all ingredients until smooth and fragrant.
- 3 in a pan heat oil and sauté for 5 minutes. add the mince and cook for another 5-10 minutes or until browned. add the tomatoes, olives and the blended sauce and season again with salt and pepper. once brought to the boil, immediately turn down and simmer for 15 minutes.
- 4 pre heat the oven 190°c.
- 5 cut each potato in half lengthwise and carefully scoop out 2/3 of the pulp from the potato and some from the lids so the potatoes will close once the filling is in them. fill the cavity with the lamb mixture and sprinkle with a little cheese. replace the potato lid and bake in the oven for 20 minutes until golden brown. serve with your choice of sides.
