Pressure Cooker Pulled Lamb (lamb Butt)

Total Time: 1 hr 45 mins Preparation Time: 30 mins Cook Time: 1 hr 15 mins

Ingredients

  • 8 lbs lamb butt (or similar cut)
  • 2 tablespoons garlic powder
  • 1 teaspoon cayenne powder
  • 1 teaspoon salt
  • 2 teaspoons black pepper
  • barbecue sauce

Recipe

  • 1 if necessary, cut lamb butt into pieces so it will fit into pressure cooker.
  • 2 rub with spices.
  • 3 place in pressure cooker; add water until just covered.
  • 4 don't over-fill pressure cooker; check owner's manual if you're unsure.
  • 5 bring to pressure; reduce heat and cook 1 hour.
  • 6 allow 15 minutes natural pressure release: do not rush this.
  • 7 take meat out of cooking liquid. reserve cooking liquid.
  • 8 shred meat with two forks. add barbecue sauce; add extra seasonings as desired. add a little cooking liquid back in if you feel it's too dry.
