Quick Chorizo

Ingredients

- 1 small onion, diced
- 1 lb ground lamb or 1 lb lamb sausage
- salt, to taste
- black pepper, to taste
- 2 tablespoons paprika
- 1 tablespoon granulated garlic
- 1 tablespoon onion powder
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 2 tablespoons red wine vinegar
- 4 garlic cloves, minced
Recipe
- 1 dice the onion small to fine.
- 2 in a large skillet or cast iron skillet. sweat the onion with 1 tablespoon of oil on med heat for 4-5 minutes.
- 3 add the garlic and sweat for 1 minute.
- 4 add the lamb sausage, increase the heat to med/high and cook until done. while cooking use the back of spoon to crumble the sausage into small bits.
- 5 decrease the heat to med/low and add the spices (paprika, salt, pepper, garlic, onion, chili, and cumin powders). stir until well incorporated. cook for an additional 1-2 minutes.
- 6 add the red wine vinegar and stir well. cook for another 2-3 minutes.
