Quick Chorizo

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 small onion, diced
  • 1 lb ground lamb or 1 lb lamb sausage
  • salt, to taste
  • black pepper, to taste
  • 2 tablespoons paprika
  • 1 tablespoon granulated garlic
  • 1 tablespoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 tablespoons red wine vinegar
  • 4 garlic cloves, minced

Recipe

  • 1 dice the onion small to fine.
  • 2 in a large skillet or cast iron skillet. sweat the onion with 1 tablespoon of oil on med heat for 4-5 minutes.
  • 3 add the garlic and sweat for 1 minute.
  • 4 add the lamb sausage, increase the heat to med/high and cook until done. while cooking use the back of spoon to crumble the sausage into small bits.
  • 5 decrease the heat to med/low and add the spices (paprika, salt, pepper, garlic, onion, chili, and cumin powders). stir until well incorporated. cook for an additional 1-2 minutes.
  • 6 add the red wine vinegar and stir well. cook for another 2-3 minutes.
