Sicilian Linguini With Peppers And Onions

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 8 ounces ground sausage
  • 3 tablespoons olive oil
  • 2 minced garlic cloves
  • 2 onions, chopped
  • 2 red peppers (cut into strips)
  • green pepper
  • 2 tablespoons dry oregano
  • 1 1/2 cups dry wine
  • 1/2 cup chicken broth
  • 12 ounces cooked linguine
  • 1/2 cup fresh parsley
  • 3 tablespoons dry parmesan cheese
  • 4 ounces feta
  • fresh ground pepper

Recipe

  • 1 1. saute sausage until browned, then drain.
  • 2 2. heat oil in skillet and add garlic, onions, pepper, and saute until softened
  • 3 3. remove from skillet
  • 4 4. in skillet bring wine and broth to a boil, and cook while stirring until
  • 5 liquid is reduced by half.
  • 6 5. add sausage, peppers, and onions and mix.
  • 7 6. after pasta is cooked, add the pasta, parsley, feta cheese, pepper, and parmesan cheese.
