Simple Roasted Lamb

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 8
  • 2 -2 1/2 lbs boneless lamb roast, rib or 2 -2 1/2 lbs boneless lamb loin
  • 1/3 cup ketchup
  • 1/4 cup packed brown sugar
  • 3/4 cup apricot preserves (or peach preserves)
  • 1 tablespoon soy sauce
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper

Recipe

  • 1 preheat oven to 375.
  • 2 place lamb in a shallow baking dish.
