Smothered Lamb Chops (crock Pot)

Ingredients
- Servings: 4
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 2 -3 lbs lamb loin chops, 1-inch thick (4-6)
- 2 tablespoons vegetable oil
- 2 onions, finely chopped
- 2 garlic cloves, minced
- 1/2 cup chili sauce
- 2 tablespoons cider vinegar
- 2 tablespoons brown sugar, packed
- 1 tablespoon worcestershire sauce
- 1 teaspoon dry mustard
Recipe
- 1 on a plate, combine flour, salt and pepper and dredge lamb in mixture, coating both sides.
- 2 in a nonstick skillet, heat oil over medium heat and add lamb in batches and brown both sides; transfer to slow cooker when done.
- 3 add onions to pan, adding more oil if necessary, and cook, stirring until softened.
- 4 add garlic and cook, stirring for 1 minute.
- 5 stir in chili sauce, vinegar, brown sugar, worcestershire sauce and mustard; bring to a boil.
- 6 pour sauce over chops.
- 7 cover and cook on low for 4-5 hours or cook on high for 2-2 1/2 hours, until meat is tender.
