Smothered Lamb Chops (crock Pot)

Total Time: 5 hrs 10 mins Preparation Time: 10 mins Cook Time: 5 hrs

Ingredients

  • Servings: 4
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 2 -3 lbs lamb loin chops, 1-inch thick (4-6)
  • 2 tablespoons vegetable oil
  • 2 onions, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup chili sauce
  • 2 tablespoons cider vinegar
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon dry mustard

Recipe

  • 1 on a plate, combine flour, salt and pepper and dredge lamb in mixture, coating both sides.
  • 2 in a nonstick skillet, heat oil over medium heat and add lamb in batches and brown both sides; transfer to slow cooker when done.
  • 3 add onions to pan, adding more oil if necessary, and cook, stirring until softened.
  • 4 add garlic and cook, stirring for 1 minute.
  • 5 stir in chili sauce, vinegar, brown sugar, worcestershire sauce and mustard; bring to a boil.
  • 6 pour sauce over chops.
  • 7 cover and cook on low for 4-5 hours or cook on high for 2-2 1/2 hours, until meat is tender.
