Lamb Marsala

Ingredients

- 8 fast fry lamb loin
- 1 teaspoon salt, and
- pepper
- 2 tablespoons flour, plus
- 1 teaspoon flour
- 2 tablespoons olive oil
- 1 large shallot, finely chopped
- 2 garlic cloves, minced
- 6 ounces button mushrooms, thinly sliced
- 1/2 teaspoon dried italian herb seasoning
- 1/2 cup sweet marsala wine
- 1/2 cup chicken broth
- 1 teaspoon butter, softened
- 1/4 cup water
Recipe
- 1 sprinkle lamb with salt and pepper.
- 2 dredge in flour .in a skillet,heat oil,cook lamb ,in batches and turning once,until just a hint of pink.transfer to plate.
- 3 saute shallot and garlic until soft.add mushroom,italian seasoning saute until golden
- 4 add marsala,cook until reduce by half.add broth and 1/4 cup of water,simmer until reduced by half.
- 5 meanwhile make a paste with the butter and flour stir into sauce and cook until thickened.return lamb to pan and heat through about 5-7 minutes.
