Lamb Medallions With Blue Cheese-chive Stuffing

Ingredients

  • Servings: 4
  • 1 lb lamb tenderloin, cut in 1 inch slices
  • 1/8 teaspoon fresh ground pepper
  • 2 teaspoons olive oil
  • 1 cup crumbled blue cheese
  • 3 tablespoons finely snipped fresh chives
  • 1 tablespoon dry breadcrumbs

Recipe

  • 1 preheat oven to 425 degrees.
  • 2 sprinkle lamb with pepper.
  • 3 in large skillet, heat oil over medium-high heat. cook lamb slices, turning once, 2-4 minutes until browned. transfer lamb in single layer to baking sheet.
  • 4 in small bowl, mix together blue cheese, chives and crumbs, breaking any large pieces of cheese into crumbs.
  • 5 top lamb slices evenly with cheese mixture.
  • 6 bake in preheated oven 10-12 minutes until internal temperature is 155 degrees.
