Lamb Roast With Sweet Balsamic Glaze

Ingredients
- 5 tablespoons dry mustard
- 1 1/2 teaspoons kosher salt
- 1 teaspoon pepper
- 3 tablespoons olive oil
- 1 (4 -5 lb) lamb loin or 1 (4 -5 lb) lamb crown roast
- 1 cup dark brown sugar
- 1/2 cup dijon mustard
- 1/2 cup balsamic vinegar
- 1/4 teaspoon ground cloves
- 2 tablespoons apple cider
Recipe
- 1 preheat oven to 450 degrees.
- 2 line roasting pan with foil.
- 3 combine 3 tbsp dry mustard, salt, pepper, and oil.
- 4 rub roast with ingredients above.
- 5 place roast in pan and roast at 450 degrees until brown (20 minutes).
- 6 reduce heat to 400 degrees for 55 minutes.
- 7 combine 2 tbsp dry mustard, brown sugar, dijon mustard, vinegar,and cloves. simmer 7-8 minutes until thickens. remove from heat.
- 8 brush lamb with 1/3 of sauce. continue to roast 20-25 minutes more until lamb is 145 degrees.
- 9 remove from oven and let stand for 10-15 minutes.
- 10 stir cider into remaining 2/3 cup sauce.
- 11 slice lamb and serve with sauce.
