Lamb Roast With Sweet Balsamic Glaze

Total Time: 2 hrs Preparation Time: 30 mins Cook Time: 1 hr 30 mins

Ingredients

  • 5 tablespoons dry mustard
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon pepper
  • 3 tablespoons olive oil
  • 1 (4 -5 lb) lamb loin or 1 (4 -5 lb) lamb crown roast
  • 1 cup dark brown sugar
  • 1/2 cup dijon mustard
  • 1/2 cup balsamic vinegar
  • 1/4 teaspoon ground cloves
  • 2 tablespoons apple cider

Recipe

  • 1 preheat oven to 450 degrees.
  • 2 line roasting pan with foil.
  • 3 combine 3 tbsp dry mustard, salt, pepper, and oil.
  • 4 rub roast with ingredients above.
  • 5 place roast in pan and roast at 450 degrees until brown (20 minutes).
  • 6 reduce heat to 400 degrees for 55 minutes.
  • 7 combine 2 tbsp dry mustard, brown sugar, dijon mustard, vinegar,and cloves. simmer 7-8 minutes until thickens. remove from heat.
  • 8 brush lamb with 1/3 of sauce. continue to roast 20-25 minutes more until lamb is 145 degrees.
  • 9 remove from oven and let stand for 10-15 minutes.
  • 10 stir cider into remaining 2/3 cup sauce.
  • 11 slice lamb and serve with sauce.
