Lamb Souvlaki

Ingredients
- Servings: 4
- 1 1/2 lbs lamb shoulder (cubed & trimmed of fat)
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 2 tablespoons lemon juice
- 2 teaspoons oregano
- 1/4 teaspoon dried mint
- salt
- pepper
- red pepper flakes
Recipe
- 1 mix marinade ingredients in plastic bag.
- 2 add lamb cubes.
- 3 toss to thoroughly coat.
- 4 marinate a minimum of 30 min at room temp or much longer in the fridge. turn occaisionally.
- 5 thread on skewers.
- 6 broil or grill 6 minutes per side, turning once.
- 7 serve with rice or pita pockets & tzatziki sauce.
