Lamb Tacos ( Crispy Like Carnitas)

Ingredients
- 3 -4 lbs lamb shoulder
- 1/4 cup olive oil
- 1 tablespoon minced garlic
- 2 teaspoons adobo seasoning
- 2 teaspoons lemon juice
- 2 teaspoons coriander, and annatto such as goya
- 1 teaspoon oregano
- salt and pepper, as needed
- 1 lime
- cilantro, onions, serrano's, cheese, and tomato (all chopped)
- 2 dozen corn tortillas, brushed with corn oil and placed in foil and heated at 2501 hour
Recipe
- 1 cup lamb into large chunks.
- 2 mix all other ingredients together in a small bowl.
- 3 rub mixture all over the lamb chunks.
- 4 place in a crock pot
- 5 cook on low 7-9 hours or until very tender.
- 6 place cooked meat on cookie pan in hot oven 450. for about 15 minutes or until crispy.
- 7 place meat on tortillas and top with toppings squeeze lime on top if wanted.
