Lamb Souvlaki

Ingredients

- 1 1/2 lbs boneless lamb loin or 1 1/2 lbs lamb tenderloin
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 4 garlic cloves, smashed
- 1 tablespoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 cup prepared tzatziki, sauce (make your own, recipe in'zaar)
- 6 greek pita breads
Recipe
- 1 trim and cut lamb into 1 inch cubes.
- 2 in large bowl, whisk together lemon juice, oil, garlic, oregano, salt and pepper.
- 3 add lamb and stir to coat.
- 4 marinate for 10 minutes (make ahead: cover and refrigerate for up to 24 hours).
- 5 evenly thread lamb onto six 8 inch skewers; place on foil lined baking sheet.
- 6 brush with marinade.
- 7 broil 6 inches away from heat, turning halfway through, until just a hint of pink remains inside, about 12 minutes.
- 8 spread tzatziki over each pita.
- 9 remove lamb from skewers and place on pitas; fold over.
