Polynesian Lamb Chops

Ingredients
- Servings: 4
- 1 tablespoon vegetable oil
- 4 boneless lamb chops, 3/4 - inch thick
- 1 medium onion, chopped
- 1 (10 ounce) can campbell's condensed cream of celery soup
- 1 (8 ounce) can pineapple chunks, drained
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 4 cups hot cooked rice
Recipe
- 1 heat oil at medium-high heat in skillet. add lamb chops and cook until browned. reduce heat to medium. add onion and cook until tender.
- 2 add mixture of soup, pineapple, soy sauce, honey, and garlic powder to skillet. heat to a boil, stirring often. reduce heat to low.
- 3 simmer, covered until lamb chops are tender - about 15 minutes, stirring occasionally. serve with rice and garnish with green onion, if desired.
- 4 polynesian pepper lamb chops: prepare as above, adding 1/2cup red pepper strips and 1 cup sliced water chestnuts for simmer time.
- 5 polynesian chicken: replace lamb chops with 4 boneless, skinless chicken breasts (about 1 lb). replace celery soup with campbell's condensed cream of mushroom soup., stir in 1/2 cup plain yogurt and 2 tablespoons unsweetened coconut for the last 5 minutes of simmer time.
