Smoky Maple-mustard Chops

Ingredients

- 4 smoked lamb chops
- 1 granny smith apple, 1" dice
- 1 medium onion, 1" dice
- 1/4-1/3 cup maple syrup
- 1 -2 tablespoon brown mustard
- salt
- pepper
- wine (to deglaze)
Recipe
- 1 brown chops in a small amount of butter over medium heat (8-10 min).
- 2 sprinkle with salt and pepper.
- 3 add apples and onions halfway through.
- 4 meanwhile, mix maple syrup and mustard.
- 5 when chops are evenly browned, deglaze with wine, scraping up the crusty bits in the pan.
- 6 pour maple-mustard mixture over all.
- 7 simmer 1-2 minutes more.
