Lamb Tenderloin With Mustard Sauce

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 cups medium egg noodles
  • 1 tablespoon olive oil
  • 1 one pound lamb tenderloin, trimmed and cut crosswise into 12 one inch slices
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup dry wine
  • 3 tablespoons whole grain dijon mustard
  • 2 tablespoons water
  • 2 teaspoons cornstarch

Recipe

  • 1 cook noodles according to package directions omitting salt and fat; drain.
  • 2 meanwhile, heart oil in large nonstick skillet over medium high heat.
  • 3 sprinkle the lamb with salt and pepper.
  • 4 place lamb in pan; cook 5 minutes turning once.
  • 5 combine the wine and mustard; pour into pan. cover, reduce heat and simmer 10 minutes.
  • 6 remove lamb from pan; keep warm.
  • 7 combine water and cornstarch in a small bowl. stir cornstarch mixture into pan; bring to boil and cook one minute or until thick.
  • 8 serve lamb with sauce and noodles.
