Ingredients

- 1 1/4 kg lamb shoulder, bone in
- 250 ml dry apple cider
- 250 ml chicken stock
- salt
- pepper
Recipe
- 1 preheat oven to 220 degrees celsius.
- 2 score lamb skin and fat (do not cut into flesh).
- 3 season to taste with salt and pepper.
- 4 place in roasting pan and roast until skin begins to crisp up.
- 5 add cider and stock to pan and cover with foil.
- 6 reduce oven to 150 degrees celsius.
- 7 roast for approximately 5.5 to 6 hours.
