Lamb In Cider Sauce

Ingredients

  • Servings: 4
  • 1 lb boneless lamb, cut into bite size strips
  • 1 tablespoon cooking oil
  • 1/2 cup apple cider
  • 1/4 cup onion, chopped
  • 4 teaspoons cornstarch
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon, ground
  • 1/2 cup apple cider
  • 2 tablespoons vinegar
  • 1 medium apple, peeled, cored and coarsely chopped
  • 1 cup rice, cooked, hot or 1 cup chow mein noodles, cooked

Recipe

  • 1 in large saucepan or dutch oven brown lamb strips in hot oil. drain off fat.
  • 2 add the first 1/2 cup cider and the onion. bring to boiling.
  • 3 reduce heat; cover and simmer about 40 minutes or until meat is tender.
  • 4 in bowl, combine cornstarch, brown sugar, salt and cinnamon.
  • 5 blend in the remaining 1/2 cup cider and the vinegar.
  • 6 add to lamb mixture along with apple. cook and stir until mixture is thickened and bubbly.
  • 7 cook and stir 2 minutes more. serve lamb mixture over hot cooked rice or ward chow mein noodles.
  • 8 enjoy - it is a really nice change. even the 3 and 5 year olds liked it! margo
