Lamb In Cider Sauce
Ingredients

- 1 lb boneless lamb, cut into bite size strips
- 1 tablespoon cooking oil
- 1/2 cup apple cider
- 1/4 cup onion, chopped
- 4 teaspoons cornstarch
- 1 tablespoon brown sugar
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon, ground
- 1/2 cup apple cider
- 2 tablespoons vinegar
- 1 medium apple, peeled, cored and coarsely chopped
- 1 cup rice, cooked, hot or 1 cup chow mein noodles, cooked
Recipe
- 1 in large saucepan or dutch oven brown lamb strips in hot oil. drain off fat.
- 2 add the first 1/2 cup cider and the onion. bring to boiling.
- 3 reduce heat; cover and simmer about 40 minutes or until meat is tender.
- 4 in bowl, combine cornstarch, brown sugar, salt and cinnamon.
- 5 blend in the remaining 1/2 cup cider and the vinegar.
- 6 add to lamb mixture along with apple. cook and stir until mixture is thickened and bubbly.
- 7 cook and stir 2 minutes more. serve lamb mixture over hot cooked rice or ward chow mein noodles.
- 8 enjoy - it is a really nice change. even the 3 and 5 year olds liked it! margo
