Lamb Medallions With Garlic-strawberry Sauce

Ingredients

- 1 (1 lb) lamb tenderloin, cut into 1/2-inch slices
- 1/4 teaspoon salt (to taste)
- 1/4 teaspoon pepper (to taste)
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 2/3 cup seasoned bread crumbs
- 1/2 cup butter, divided
- 2 cups fresh strawberries
- 1 teaspoon minced garlic
- 1/4 cup hot water
- 1 teaspoon chicken bouillon granule
- sliced fresh strawberries, for garnish
Recipe
- 1 flatten lamb to 1/4-inch thickness; sprinkle with salt and pepper.
- 2 place the flour, eggs, and bread crumbs in separate shallow bowls.
- 3 dip lamb in flour, eggs, then bread crumbs.
- 4 in a large skillet over medium heat, cook the lamb in 1/4 cup butter until the juices run clear; remove and keep warm.

- 6 in the same skillet, saute garlic in remaining butter; add pureed strawberries, water, and bouillon; heat through.
- 7 serve lamb with sauce; garnish with sliced strawberries.
