Lamb Medallions With Garlic-strawberry Sauce

Ingredients

  • Servings: 4
  • 1 (1 lb) lamb tenderloin, cut into 1/2-inch slices
  • 1/4 teaspoon salt (to taste)
  • 1/4 teaspoon pepper (to taste)
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 2/3 cup seasoned bread crumbs
  • 1/2 cup butter, divided
  • 2 cups fresh strawberries
  • 1 teaspoon minced garlic
  • 1/4 cup hot water
  • 1 teaspoon chicken bouillon granule
  • sliced fresh strawberries, for garnish

Recipe

  • 1 flatten lamb to 1/4-inch thickness; sprinkle with salt and pepper.
  • 2 place the flour, eggs, and bread crumbs in separate shallow bowls.
  • 3 dip lamb in flour, eggs, then bread crumbs.
  • 4 in a large skillet over medium heat, cook the lamb in 1/4 cup butter until the juices run clear; remove and keep warm.
  • 5 meanwhile, place the strawberries in a food processor; cover and process until blended; set aside.
  • 6 in the same skillet, saute garlic in remaining butter; add pureed strawberries, water, and bouillon; heat through.
  • 7 serve lamb with sauce; garnish with sliced strawberries.
