Lamb Ragu

Total Time: 2 hrs Preparation Time: 30 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 2
  • 281 g lamb loin, cubed. remove as much fat as possible
  • 1 small red onion, chopped
  • 1 medium carrot, chopped
  • 1 stalk celery, chopped
  • 290 g chopped canned tomatoes
  • 1/2 teaspoon hot italian seasoning

Recipe

  • 1 fry onions, carrot and celery in a little oil or spray till softened and colouring.
  • 2 add lamb and fry till browned.
  • 3 add tomatoes and italian seasoning.
  • 4 add stock cube and add enough water to cover contents.
  • 5 bring to boil, cover, turn down heat and simmer on stove till tender or place in oven and simmer till tender.
  • 6 serve with rice or polenta or over baked potato.
