Lamb Tenderloin Medallions

Total Time: 1 hr 35 mins Preparation Time: 5 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 6
  • 4 lbs whole lamb tenderloin
  • salt
  • pepper
  • garlic powder
  • 4 ounces margarine
  • 10 ounces currant jelly
  • 8 ounces sour cream

Recipe

  • 1 season whole lamb tenderloins with salt, pepper and garlic powder.
  • 2 roast in shallow baking dish at 350 degrees, uncovered for 35 to 40 minutes.
  • 3 cut butter into slices and place over meat.
  • 4 spread jelly over meat evenly.
  • 5 cover dish with foil.
  • 6 roast additional 30 minutes.
  • 7 baste and turn meat.
  • 8 roast additional 30 minutes, uncovered.
  • 9 remove meat to heated platter.
  • 10 add sour crem to gravy, whisking it immediately, stirring well and reheat then slowly.
  • 11 thicken with corn starch if necessary.
  • 12 slice meat into medallions on a diagonal.
  • 13 cover with thickened gravy.
  • 14 can be served with twice baked potatoes and asparagus with hollandaise sauce.
