Lamb Tenderloin Medallions

Ingredients

- 4 lbs whole lamb tenderloin
- salt
- pepper
- garlic powder
- 4 ounces margarine
- 10 ounces currant jelly
- 8 ounces sour cream
Recipe
- 1 season whole lamb tenderloins with salt, pepper and garlic powder.
- 2 roast in shallow baking dish at 350 degrees, uncovered for 35 to 40 minutes.
- 3 cut butter into slices and place over meat.
- 4 spread jelly over meat evenly.
- 5 cover dish with foil.
- 6 roast additional 30 minutes.
- 7 baste and turn meat.
- 8 roast additional 30 minutes, uncovered.
- 9 remove meat to heated platter.
- 10 add sour crem to gravy, whisking it immediately, stirring well and reheat then slowly.
- 11 thicken with corn starch if necessary.
- 12 slice meat into medallions on a diagonal.
- 13 cover with thickened gravy.
- 14 can be served with twice baked potatoes and asparagus with hollandaise sauce.
