Smoked Rosemary Garlic Lamb Chops

Ingredients
- 4 -6 thick boneless lamb chops (3/4-inch to 1-inch, what ever you can fit in the smoker)
- 2 cups olive oil
- 3 tablespoons fresh rosemary leaves
- salt
- fresh ground pepper
- 2 tablespoons minced garlic
Recipe
- 1 salt and pepper the chops to taste.
- 2 place the chops in a large glass or plastic container
- 3 pour the marinade over the lamb chops, make more marinade if needed.
- 4 marinade over night, turn once.
- 5 remove the chops from the marinade.
- 6 let the oil drip off and wipe off the garlic and rosemary leaves.
- 7 place on a smoker preheated to 225 degrees.
- 8 smoke until just done. 160 degrees.
