Smoked Rosemary Garlic Lamb Chops

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • 4 -6 thick boneless lamb chops (3/4-inch to 1-inch, what ever you can fit in the smoker)
  • 2 cups olive oil
  • 3 tablespoons fresh rosemary leaves
  • salt
  • fresh ground pepper
  • 2 tablespoons minced garlic

Recipe

  • 1 salt and pepper the chops to taste.
  • 2 place the chops in a large glass or plastic container
  • 3 pour the marinade over the lamb chops, make more marinade if needed.
  • 4 marinade over night, turn once.
  • 5 remove the chops from the marinade.
  • 6 let the oil drip off and wipe off the garlic and rosemary leaves.
  • 7 place on a smoker preheated to 225 degrees.
  • 8 smoke until just done. 160 degrees.
